Taken As A Sign

When I opened my webpage last night I got a page error saying WordPress was a Read-Only website and nothing could be posted to my personal webpage, so I took it as a sign that I wasn’t supposed to blog and relaxed the night away. 

I woke up bright and early and was able to cook breakfast and pack my lunch without it being a random mix of items thrown together.  Breakfast was a fried yolky egg with a whole wheat English muffin with a tad of Brummel & Brown.  I also had a Chobani Strawberry Banana Greek Yogurt for some additional staying power.

My salad for today’s lunch was similar to a Cobb salad in the way I lined up everything, but it was missing a few essentials when it comes to being compared to one like boiled egg, avocado, blue cheese, and bacon.  Though that didn’t keep me from enjoying it.  It turned out to be more of a club salad instead.


I started with a bed of butter mix lettuce and iceberg.  The lettuce mix was topped with grape tomaters, sliced turkey, reduced fat colby jack, and broccoli slaw.  I topped the salad with 2 tablespoons of light ranch dressing.  Gotta have ranch on a club salad.  I had a large apple on the side.


The snacks of the day included a Cherry Pie Larabar and tortilla chips with some spicy salsa.

After tutoring I headed home, did a few chores then made my way to the grocery.  I picked up a couple portabellas to roast for dinner, but turns out I am not a fan of them. 


I baked them at 400* and I think they would have been better grilled.  Anyway, my sandwich thin was smeared with dijon mustard, low fat mayo; and the mushroom was topped with muenster, spinach, and roma tomatoes before being removed from the bun.  I only ate a little more than half of the shroom before its removal only to finish the toppings and cheese.  Leftover corn from last night’s dinner was enjoyed on the side.


I made Chris a portabella sandwich as well.  Before I even sat down and finished up snapping pictures, he had finished his sandwich and he said, “It was just okay, but I don’t want it ever again.”  A few minutes later [laughing] he pulls the entire mushroom from a bowl that was holding his garlic-buttered corn.  He did not even eat but one tiny bite of the portabella.  I’ll take that as a sign and skip the portabellas next time. 😉


Husband Turns 32

Yesterday was Chris’s 32nd birthday.  After work I asked him if he wanted to do anything to celebrate and he just wanted to stay home and get some pizza.  So I went to Come Back Inn to pick up a pizza with Italian sausage, onions, green pepper, jalapeños, mushroom, and black olives.  The pizza crust was thin and crispy just the way we like it.


We also had a large Italian salad on the side which was full of mozzarella cheese, olive salad over iceberg lettuce, tomatoes, sliced egg, and salami.


I had a slice and a half of pizza with some of the salad.


Then I had some of the cake I bought for two.

DSC01604 It was not all that great because it was more chocolate candy than actual cake, but still a sweet treat nonetheless.  Rather than blog last night I decided to spend some QT with Chris since after all it was his birthday.

Yesterday morning I just wasn’t feeling my hot oatmeal so this morning I went with another favorite—peanut butter, yogurt, banana, and sweet potato pecan topped whole wheat toasted English muffin.

Plus some hot chai tea.

For lunch I started with a bed of spring mix.


Topped with some of the Italian salad from last night.


I also had an apple for some sweetness.

After work I headed straight over to the gym.  I grabbed a Ultramet Lite Vanilla Smoothie at the cafe since my stomach was talking to me.  Then I proceeded to do 15 minutes on the elliptical, 40 minutes of weights, and 7 minutes on the stair climber to finish.

Dinner had to incorporate some of the broccoli from the husband’s garden. 


I picked up some flank steak the other day with intentions on making fajitas, but I nixed that idea two nights ago to make bean enchiladas and saved the beef for tonight’s beef and broccoli.

I used a recipe I found online that used a marinade of dry sherry, soy sauce, and cornstarch (used flour instead).  It was a good thing I didn’t salt the dish because the lite soy sauce made it super salty.  The beef and broccoli was served over brown rice.

Finally, I had a small handful of granola and 2 dates since I was feeling snacky.  I also took a bite of last night’s cake too.

Now it’s time to hit the hay; only one more work day ’til the weekend! Yay!

Feed Me, Tony!

Early this morning my hubby surprised me with breakfast.  He brought me an Egg Mcmuffin and an iced coffee.  It was a nice treat; thanks hubby!

Nom, nom, nom


Tony Angelo’s is a fabulous Italian restaurant to dine at if you are ever in the metro New Orleans area and in the mood for Italian ofcourse.  The menu includes all of the norm Italian dishes–lasagna, spaghetti and meatballs, veal, eggplant, and chicken parmesan.  But if you are feeling really brave on your visit and want to eat lots of food due to how hungry you are, you can simply sit down at your table without even looking at a menu and say, “Feed me, Tony!”  Those three words will get you an eight course meal of the chef’s choice.  I personally have never done the whole “Feed me, Tony,” but my dad has.  It would be way too much food for me, but it sure does put me in the mood for some tasty Italian.

Well it’s not Italian (more like Greek), but it was my snack before heading out the door. 

I had to run to Educator this afternoon to get some things for my classroom.  I was excited to head there because Whole Foods was right down the street and I wanted to stop before going back home.  And my stomach was grateful I did because I could hear it saying, “Feed me, Melissa!”  So I quickly no more like leisurely went through the store picking up some suggestions that I found on different blogs.  I got some fruits, veggies, almond butter, arctic zero, larabars, bread, oikos yogurt, cereal, and a salad to enjoy for my lunch.

 I had a bunch of fresh veggies, couple of pieces of tofu, a small scoop of chicken salad, and a drizzle of the oil free pomegranate dressing.  It really hit the spot! 🙂

Next up, a trip to the gym.  I did 15 minutes elliptical, about 30 minutes of weight training, and 15 minutes on the treadmill.  After the gym I just had to try one of my larabars; I really love the ingredient list.

Apple Pie

The flavor of cinnamon came out strongly, but I also enjoyed the small bits of apple.


For dinner tonight, I decided on something simple–grilled hot italian turkey sausage po’ boys (for more on po’boys click here) with roasted okra on the side.  I probably would have chosen asparagus to roast, but saw okra at Whole Foods which reminded me of Kath’s Eats and how much she enjoys okra.  So I thought, “Let me give it a try.” 

I intended to eat my sausage po’ boy as a sandwich on the crusty seeded wheat bread I got at Whole Foods, but then thought it may be easier to have it open-faced.

The sandwich includes a schmear of dijonaise, romaine lettuce, an avacado that needed to be used, and the italian turkey sausage.

Hot, Hot, Hot

Actually the sausage said hot, but the heat wasn’t coming across much.  And the final picture shows how I really ate this.  The whole sandwich idea, closed or opened, just wasn’t happening.

It still tasted delish and I got my Italian after all!! 😉
